While the exact origins are still debated among historians, one popular theory suggests that pasta was brought to Italy by Marco Polo after his travels in Asia. However, many believe that pasta has been a staple of the Mediterranean diet since the Middle Ages, possibly even earlier, with roots tracing back to ancient Rome. The Romans considered pasta a "gift from the Gods," and it was a delicacy reserved for the wealthy, often served on special occasions. During the 17th century, Naples experienced an economic downturn that made pasta affordable and accessible to the masses, leading to its widespread popularity. By the 19th century, the addition of tomatoes transformed pasta into the beloved dish we know today. Regardless of its origins, pasta has become a symbol of Italian culinary heritage and is enjoyed by people worldwide.
Did you know that there are over 600 different shapes of pasta? Each one is designed to complement specific types of sauces. For instance, the grooves in rigatoni help hold thicker sauces, while the thin strands of spaghetti are perfect for lighter, oil-based sauces.
Italy produces over 3 million tons of pasta each year, and the average Italian consumes about 60 pounds of pasta annually! Contrary to popular belief, the infamous "spaghetti trees" in the 1957 BBC April Fool's Day prank were not real, but it sure fooled a lot of viewers. Another fun fact: the world record for the largest bowl of pasta was set in Poland in 2015, weighing in at a whopping 17,417 pounds!

Using a fork, mix the salt, flour and colouring powder in a large bowl. Creativity starts here — play around with the pasta dyes to create your favourite colours. The colour may change after cooking and become lighter; that's normal for natural vegetable powders, whose colour fades in sunlight and when mixed with flour and water.
Be careful with the powders — they can stain hands and clothes. We recommend gloves and an apron.
With your fingers, form a well in the flour-salt mixture, deep enough to keep the flour walls intact. For an authentic touch, do it straight on your kitchen counter (it can get messy!). Use plenty of flour.
Crack the eggs into the centre of the well. Using a fork, gently break up the eggs, keeping the flour walls intact as best you can.
Carefully combine the eggs with the dry ingredients. Take your time and enjoy the process. Continue until the dough feels very soft.
Coat a clean counter-top with a handful or two of flour. Pour the dough on and fold it over itself until firm, then knead: with your knuckles and the heel of your hand, press, push, punch and roll until you can't see any air bubbles. Add more flour as needed. When it forms a smooth, elastic ball, it's ready.
Not sure? Slice the dough in half with a knife — if you see bubbles, keep kneading.
Wrap the dough in plastic and let it rest in a bowl for half an hour at room temperature, or up to 24 hours in the fridge. If refrigerated, bring it back to room temperature before use.
Use the rolling pin from your kit. Be patient — the dough may spring back, so keep working it to the thickness you want.
